This Hibiscus Raspberry Iced Tea combines the nostalgic memory of homemade summer drinks with the bright, tangy sweetness of ripe raspberries. It is a stunning, no-fuss drink that feels both elegant and effortless, perfect for backyard barbecues or lazy porch afternoons.

  • 4 cups water
  • 4 hibiscus tea bags or 2 tablespoons loose dried hibiscus flowers
  • 1 cup fresh or frozen raspberries, plus extra for garnish
  • 1/3 cup honey or agave syrup, adjust to taste
  • 1 tablespoon fresh lime juice
  • Ice cubes for serving
  • Fresh mint sprigs for garnish

Instructions

  1. Bring 4 cups of water to a rolling boil in a medium saucepan. Remove from heat and add your hibiscus tea bags or loose flowers. Let them steep for 15 minutes, no longer. Remove the tea bags or strain out the flowers.
  2. While the tea steeps, place your raspberries in a large heatproof pitcher. Use a wooden spoon or muddler to gently crush them. You want them broken down but not pureed.
  3. Pour the hot hibiscus tea over the muddled raspberries. Add your honey or sweetener while the tea is still warm so it dissolves completely. Stir gently until everything is combined.
  4. Stir in the fresh lime juice. Let the mixture cool to room temperature, about 20 minutes, then transfer to the refrigerator. Chill for at least 30 minutes or up to 2 days.
  5. Fill glasses with ice cubes. Pour the chilled Hibiscus Raspberry Iced Tea over the ice, leaving room for garnish. Add a few fresh raspberries and a sprig of mint to each glass.

Notes

For a sugar-free version, swap honey for monk fruit sweetener or stevia. If you prefer a more floral note, add a splash of elderflower cordial. Frozen raspberries work beautifully here and actually help chill the tea faster. The flavors deepen as the tea rests, making it a perfect make-ahead recipe. Store in a sealed glass pitcher in the refrigerator for up to 5 days.
