These tender, buttery thumbprint cookies are shaped with a heart indentation and filled with vibrant jam. They are a simple, heartfelt treat perfect for Valentine's Day or any occasion. The melt-in-your-mouth texture comes from properly creaming the butter and sugar.

Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1/2 cup jam or preserves (raspberry, strawberry, or cherry recommended)

Instructions

  1. Cream the butter and sugar in a large bowl with an electric mixer on medium speed for 2-3 minutes, until pale and fluffy.
  2. Scrape down the bowl. Add the egg yolk and vanilla extract. Mix on low just until combined.
  3. In a separate bowl, whisk together the flour and salt.
  4. With the mixer on low, gradually add the flour mixture to the wet ingredients. Mix just until a soft dough forms.
  5. Wrap the dough in plastic wrap, flatten into a disc, and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop dough into 1-inch balls (about 1 tablespoon each). Roll smooth between your palms.
  8. Use the handle of a wooden spoon to press a V-shaped well into each ball to create a heart indent. Place cookies 2 inches apart on sheets.
  9. Bake for 10-12 minutes, until edges are just barely golden. Centers will look soft.
  10. Immediately upon removing from oven, gently redefine the heart indent with your tool. Fill each warm cookie with about 1/2 teaspoon of jam.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Do not skip chilling the dough. Fill with jam after baking, not before. For a gluten-free version, use a 1:1 gluten-free flour blend. Store in an airtight container at room temperature for up to 5 days.
