  • 3 cups air-popped popcorn
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raw almonds or pecans
  • 1/2 cup dark chocolate chips (at least 70%)
  • 1 tsp coconut oil
  • 1/2 cup mini marshmallows
  • 1/2 cup freeze-dried strawberries or raspberries
  • 1 pinch sea salt

Instructions

  1. In a large dry skillet over medium heat, toast the cereal, coconut flakes, and nuts for 3-4 minutes until fragrant, stirring constantly. Transfer to a large bowl and let cool slightly. Add the popcorn.
  2. In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips with the coconut oil until smooth.
  3. Pour the melted chocolate over the toasted mix. Using a spatula, gently fold until everything is lightly coated.
  4. Let the mix cool for 1-2 minutes, then add the mini marshmallows and freeze-dried berries. Fold gently to incorporate.
  5. Sprinkle with a pinch of sea salt. Spread the mix on a parchment-lined baking sheet to set. For faster setting, refrigerate for 10 minutes.
  6. Once the chocolate has hardened, break the mix into clusters. Store in an airtight container.

Notes
