Ingredients

Scale
  • 2 cups plain Greek yogurt
  • 1 pint fresh strawberries, chopped
  • 2 tbsp pure maple syrup, divided
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1/2 cup natural almond butter
  • 1/4 cup dark chocolate chips
  • 2 tbsp chia seeds
  • 1/4 tsp sea salt
  • Fresh raspberries for garnish

Instructions

  1. Make the Strawberry Yogurt Parfaits: Toss chopped strawberries with 1 tsp maple syrup. Let sit 10 min. Mix 1 cup yogurt with 1/2 tsp vanilla and 1 tbsp maple syrup. In glasses, layer berries, then sweetened yogurt. Chill.
  2. Make the Protein Cookie Bars: In a bowl, mix oats, almond butter, 1 tbsp maple syrup, chia seeds, and salt until a thick dough forms. Press into a small lined dish. Sprinkle with chocolate chips, pressing them in. Chill for 1 hour, then slice into bars.
  3. Make the Frozen Yogurt Bites: Mix remaining 1 cup yogurt with 1/2 tsp vanilla. Spoon small dollops onto a parchment-lined tray. Top each with a raspberry or chocolate chip. Freeze for 1 hour until solid.
  4. Assemble the Board: Arrange the chilled parfaits, sliced cookie bars, and frozen yogurt bites on a large board or platter. Fill space with extra fresh berries and chocolate chips. Serve immediately.

Notes

For a vegan board, use coconut yogurt and maple syrup. Ensure oats are certified gluten-free if needed. The frozen bites can be made days ahead and stored in the freezer.
