- 2 lbs lean grass-fed beef (such as top round or sirloin), partially frozen for easier slicing
- ¼ cup coconut aminos (or low-sodium tamari for a gluten-free option)
- 2 tbsp apple cider vinegar
- 1 tbsp raw honey or pure maple syrup (optional, for a hint of sweetness)
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ¼ tsp cayenne pepper (adjust to taste)
- 1 tsp sea salt
Instructions
- Slice the Beef: Remove the beef from the freezer once it’s firm but not solid. Using a sharp knife, slice against the grain into ¼-inch thick strips. For more tender jerky, slice with the grain. Consistency in thickness is key to even drying.
- Prepare the Marinade: In a medium bowl, whisk together coconut aminos, apple cider vinegar, honey (if using), smoked paprika, garlic powder, onion powder, black pepper, cayenne, and sea salt.
- Marinate the Beef: Place the beef strips in a large resealable bag or shallow dish and pour the marinade over them. Massage gently to coat every piece. Seal and refrigerate for at least 4 hours, or overnight for deeper flavor.
- Dry the Jerky: Preheat your oven to 175°F (or the lowest setting). Arrange the marinated beef strips in a single layer on wire racks set over baking sheets. Bake for 3–4 hours, rotating trays halfway through, until the jerky is firm but still pliable.
- Cool and Store: Remove the jerky from the oven and let it cool completely on the racks. Once cool, transfer to an airtight container.
Notes
Store in an airtight container at room temperature for up to 2 weeks. For longer storage, keep in the refrigerator for up to 2 months or freeze for up to 6 months. For more tender jerky, slice with the grain. For easier chewing, slice against the grain.
