These juicy, flavor-packed skewers combine ranch seasoning, garlic, and parmesan for the ultimate grilled chicken experience — ready in under 30 minutes!

Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons ranch seasoning (store-bought or homemade)
  • 4 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine olive oil, ranch seasoning, minced garlic, parmesan, lemon zest, parsley, black pepper, and red pepper flakes. Stir into a paste.
  2. Add chicken cubes and toss to coat. Let marinate for at least 15 minutes or up to 4 hours.
  3. If using wooden skewers, soak them for 15 minutes. Thread chicken pieces onto skewers with small gaps in between.
  4. Preheat grill to medium-high heat (375-400°F) and oil the grates.
  5. Grill skewers for 4-5 minutes per side, rotating until chicken reaches 165°F and has nice grill marks.
  6. Remove from grill, rest for 3-5 minutes, then serve with additional parsley and parmesan if desired.

Notes

For a dairy-free version, substitute nutritional yeast for parmesan. These skewers can also be baked at 425°F for 15-18 minutes if grilling isn’t an option.
