These soft, chewy pretzel bites are coated in savory garlic butter and nutty Parmesan cheese. Perfect for sharing at parties or as a comforting snack, they are surprisingly simple to make at home.

Ingredients

  • 1 ½ cups warm water (about 110°F)
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 tablespoon granulated sugar
  • 4 ½ cups all-purpose flour, plus more for dusting
  • 2 teaspoons fine sea salt
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 10 cups water
  • ⅔ cup baking soda
  • 6 tablespoons unsalted butter, melted
  • 4 cloves garlic, finely minced
  • ½ cup finely grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • ½ teaspoon garlic powder
  • Flaky sea salt, for sprinkling

Instructions

  1. Activate the yeast by combining warm water, yeast, and sugar in a stand mixer bowl. Let sit for 5-7 minutes until foamy.
  2. Add flour, salt, and 4 tbsp melted butter to the yeast mixture. Mix with a dough hook on low until combined, then knead on medium for 4-5 minutes until smooth. Dough should be slightly tacky.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  4. Punch down dough. On a floured surface, divide into 4 pieces. Roll each into a 1-inch thick rope and cut into 1-inch pieces.
  5. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  6. Bring 10 cups water and baking soda to a gentle boil in a large pot. Poach dough bites in batches (10-12 at a time) for 30 seconds, then transfer to baking sheets with a slotted spoon.
  7. Bake for 12-15 minutes, rotating pans halfway, until deep golden brown.
  8. While baking, combine 6 tbsp melted butter and minced garlic. Brush hot pretzel bites with garlic butter, then sprinkle with Parmesan, parsley, garlic powder, and flaky salt. Serve warm.

Notes

Do not skip the baking soda bath, as it creates the classic pretzel crust and flavor. Use freshly grated Parmesan for best melting and flavor. Leftovers can be stored in an airtight container at room temperature for up to 2 days and reheated in the oven.
