These skewers feature juicy chicken cubes marinated in a savory blend of garlic, Parmesan, and herbs, then grilled to perfection with a beautifully blistered crust.   • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/3 cup extra virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 4-5 large garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

  1. In a large bowl, whisk together olive oil, Parmesan, garlic, lemon juice, Italian seasoning, paprika, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the bowl and toss until all pieces are thoroughly coated. Cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken onto the skewers, leaving a small space between pieces for even cooking.
  5. Preheat your grill to medium-high heat (about 400-450°F) and lightly oil the grates.
  6. Place the skewers on the hot grill. Cook for 5-6 minutes per side, turning once, until the chicken is cooked through with good grill marks and an internal temperature of 165°F.

Notes

For best results, do not overcrowd the skewers on the grill. Chicken thighs stay juicier than breasts. For a dairy-free version, substitute Parmesan with nutritional yeast. Do not marinate for more than 4-6 hours as the lemon juice can make the texture mushy.
