This one-pan Garlic Butter Shrimp Skillet is a quick and flavorful weeknight dinner. Juicy shrimp are seared and simmered in a rich, aromatic sauce of butter, garlic, white wine, and fresh tomatoes. It's a versatile dish that's ready in under 30 minutes and perfect served over pasta, rice, or greens.

  • 1 ½ pounds large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 6-8 cloves garlic, minced
  • 1 pint cherry or grape tomatoes, halved
  • ¼ cup dry white wine or chicken broth
  • 2 tablespoons fresh lemon juice
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil or oregano
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat shrimp dry with paper towels. Season generously with salt and black pepper.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and olive oil.
  3. Once butter is foaming, add shrimp in a single layer. Sear for 1-2 minutes per side until pink and golden. Remove to a plate.
  4. Reduce heat to medium. Add remaining 3 tablespoons butter to skillet.
  5. Add minced garlic and cook for 30-60 seconds, stirring, until fragrant.
  6. Add halved tomatoes and a pinch of salt. Cook for 3-4 minutes until tomatoes soften.
  7. Pour in white wine or broth, scraping up browned bits. Simmer for 2-3 minutes to reduce.
  8. Stir in lemon juice and most of the fresh herbs.
  9. Return shrimp and any juices to skillet. Toss and cook for 1 more minute until heated through.
  10. Taste and adjust seasoning. Sprinkle with remaining herbs and serve immediately.

Notes

For best results, ensure shrimp are thoroughly dried before searing to prevent steaming. Do not overcrowd the pan; cook in batches if needed. The dish can be made dairy-free by substituting butter with olive oil or plant-based butter. Leftovers keep well in the refrigerator for 2-3 days.
