Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined, patted dry
  • 1 bunch asparagus (about 1 pound), woody ends trimmed, cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 4-5 large garlic cloves, minced
  • 1/4 cup dry white wine (like Sauvignon Blanc) or chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste
  • Olive oil for cooking

Instructions

  1. Prep all ingredients: Pat shrimp dry, trim and cut asparagus, mince garlic, chop parsley, and juice lemon.
  2. Cook asparagus: Heat a drizzle of olive oil in a large skillet over medium-high heat. Add asparagus, season with salt and pepper, and saute for 4-5 minutes until bright green and tender-crisp. Remove to a plate.
  3. Sear shrimp: In the same skillet, add another drizzle of oil if needed. Add shrimp in a single layer, season with salt and pepper. Cook for 1-2 minutes per side until pink and opaque. Remove to the plate with asparagus.
  4. Make sauce: Reduce heat to medium. Add butter to skillet. Once melted, add minced garlic and red pepper flakes. Cook for 30-60 seconds until fragrant. Pour in white wine and lemon juice. Simmer for 1-2 minutes, scraping up browned bits from the pan.
  5. Combine: Return cooked shrimp and asparagus to the skillet. Toss gently in the sauce until heated through, about 1 minute. Turn off heat and stir in fresh parsley.

Notes

For a creamier sauce, stir in 1/4 cup heavy cream or coconut milk after making the garlic butter sauce. Ensure shrimp are very dry before cooking to get a good sear. Do not overcook the shrimp or burn the garlic.
