  • 1 (12 oz) container frozen whipped topping, thawed
  • 1/3 cup frozen lemonade concentrate, thawed
  • 2-3 tablespoons fresh lemon juice
  • Zest of one lemon
  • Red food coloring (optional)
  • 1 1/2 cups fresh strawberries, hulled and finely chopped
  • Additional whipped topping and sliced strawberries for garnish (optional)

Instructions

  1. Make the crust: In a medium bowl, mix graham cracker crumbs and sugar. Stir in melted butter until crumbs are evenly moist. Press firmly into bottom and up sides of a 9-inch pie plate. Freeze for 10-15 minutes.
  2. Make the filling: In a large bowl, beat softened cream cheese with an electric mixer until smooth, about 2 minutes. Gradually beat in chilled sweetened condensed milk until combined.
  3. Add lemon flavor: Beat in lemonade concentrate, lemon juice, and lemon zest until just combined. Add a few drops of red food coloring if desired.
  4. Fold in toppings: Gently fold in the thawed whipped topping with a spatula. Then, fold in the chopped fresh strawberries.
  5. Assemble and freeze: Pour filling into the chilled crust, spreading evenly. Garnish with extra whipped topping and strawberry slices if desired. Cover tightly with plastic wrap and freeze for at least 6 hours, preferably overnight.
  6. Serve: Let pie sit at room temperature for 5-7 minutes before slicing for clean cuts. Serve immediately.
