  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon granulated sugar
  • 1 cup plain Greek yogurt (full-fat recommended)
  • 1/2 cup sour cream
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • Fresh chives, finely chopped (for garnish)

Instructions

  1. Caramelize the onions: In a large skillet over medium-low heat, melt butter with olive oil. Add sliced onions, sugar, and a pinch of salt. Cook, stirring occasionally, for 35-45 minutes until deeply golden brown and jammy.
  2. Cool the onions: Transfer caramelized onions to a cutting board. Let cool for 10-15 minutes, then chop roughly into small pieces.
  3. Mix the base: In a medium bowl, combine Greek yogurt, sour cream, Worcestershire sauce, garlic powder, and smoked paprika. Stir until smooth.
  4. Combine and season: Fold the cooled, chopped onions into the creamy base. Taste and season generously with salt and pepper.
  5. Chill and serve: Transfer dip to a serving bowl, cover, and refrigerate for at least 1 hour. Garnish with fresh chives before serving.

Notes

For best flavor, do not rush caramelizing the onions. Ensure onions are completely cool before mixing to prevent a runny dip. Dip can be made up to 5 days ahead; flavors improve over time. For a dairy-free version, use thick plain vegan yogurt and vegan sour cream.
