  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • ½ cup mandarin orange segments
  • ½ cup red seedless grapes, halved
  • Optional: ¼ cup apricot jam, warmed for glaze

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-inch pizza pan or 10x15-inch jelly roll pan.
  2. Make the cookie crust: In a large bowl, cream softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing on low until a soft dough forms.
  4. Press dough evenly into the prepared pan. Bake for 15-18 minutes, until edges are light golden. Cool completely on a wire rack.
  5. Make the frosting: In a medium bowl, beat softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and a pinch of salt. Beat until fluffy.
  6. Assemble: Once crust is completely cool, spread frosting evenly over it, leaving a small border.
  7. Arrange the fresh fruit in a decorative pattern on top of the frosting.
  8. Optional: Gently brush warmed apricot jam over the fruit for a glossy finish.
  9. Refrigerate assembled pizza for at least 30 minutes before slicing. Serve cold.

Notes

Ensure the cookie crust is completely cool before adding frosting to prevent melting. For a shortcut, use a 16.5-oz package of refrigerated sugar cookie dough. Assemble up to 3-4 hours before serving for best texture. Leftovers can be refrigerated for up to 2 days.
