  • 1 box (15.25 oz) white or yellow cake mix
  • Ingredients listed on cake mix box (eggs, oil, water)
  • 1 box (3 oz) strawberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) frozen whipped topping, thawed
  • Fresh strawberries, sliced for garnish (optional)

Instructions

  1. Prepare and bake the cake mix in a 9x13-inch pan according to package directions. Let cool in pan on a wire rack for 20 minutes until warm.
  2. Using the handle of a wooden spoon, poke holes all over the warm cake, spaced about 1 inch apart and going 3/4 of the way down.
  3. In a medium bowl, whisk the strawberry gelatin with 1 cup boiling water until fully dissolved, about 1 minute. Stir in 1/2 cup cold water.
  4. Slowly and evenly pour the liquid gelatin mixture over the warm cake, aiming for the holes. Use a spatula to gently spread it.
  5. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight.
  6. Just before serving, spread the thawed whipped topping evenly over the cake. Garnish with fresh strawberry slices if desired.

Notes

Cake must be warm when poked and soaked. Ensure gelatin is fully dissolved. Do not skip the 4-hour chill time. Can be made 2 days ahead; add topping before serving. For a homemade topping, whip 1.5 cups heavy cream with 1/4 cup powdered sugar and 1 tsp vanilla.
