  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup boiling water

Instructions

  1. Preheat oven to 375°F. Grease a 9x13 inch baking dish with butter or nonstick spray.
  2. In a large bowl, combine sliced peaches, 1/2 cup sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Stir gently and let sit for 10 minutes.
  3. In a separate bowl, whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder, and 1/2 teaspoon salt. Cut in cold butter until mixture resembles coarse crumbs.
  4. Pour peach mixture into prepared dish. Sprinkle flour mixture evenly over the top. Pour boiling water gently over the entire topping. Do not stir.
  5. Bake for 40-45 minutes until topping is golden brown and filling is bubbly. Let cool for at least 15 minutes before serving.
