Transform stale bread into a glorious, make-ahead breakfast. This custard-soaked bake, topped with a cinnamon crumble, emerges from the oven tender and full of flavor, perfect for stress-free mornings and feeding a crowd.

  • 1 loaf (16 oz) French bread or brioche, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick) cold unsalted butter, cubed

Instructions

  1. Grease a 9x13 inch baking dish. Add the cubed bread in an even layer.
  2. In a large bowl, whisk eggs until frothy. Whisk in milk, cream, granulated sugar, vanilla, 1 tbsp cinnamon, nutmeg, and 1/4 tsp salt until smooth.
  3. Pour custard evenly over bread. Press down gently on any dry pieces to moisten.
  4. For the topping: In a small bowl, mix flour, brown sugar, 1/2 tsp cinnamon, and 1/4 tsp salt. Add cold cubed butter and work with fingers or a fork until crumbly.
  5. Sprinkle topping evenly over the soaked bread. Cover tightly with plastic wrap and refrigerate overnight (8-12 hours).
  6. Preheat oven to 350°F (175°C). Let dish sit at room temperature while oven heats.
  7. Bake uncovered for 45-55 minutes, until top is golden brown and center is set.
  8. Let rest 5-10 minutes before serving warm with desired toppings.

Notes

Use stale bread for best texture. Soaking overnight is crucial. For a blueberry version, fold 1 1/2 cups berries into bread before adding custard. Leftovers keep refrigerated for 3 days.
