This stunning dessert requires no oven and minimal effort. A creamy, fluffy filling envelops fresh strawberries in a buttery graham cracker crust, creating a perfect make-ahead treat for any occasion.

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs (about 10-12 full sheets)
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Filling:
  • 1 pound fresh strawberries, hulled and sliced (reserve a few whole for garnish)
  • 1 (8 oz) package cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold
  • For the Glaze (Optional):
  • 1/2 cup strawberry jam or preserves
  • 1 tablespoon water or lemon juice

Instructions

  1. Make the crust. In a medium bowl, mix graham cracker crumbs and sugar. Pour melted butter over and mix with a fork until it resembles wet sand and holds together when pinched.
  2. Press the crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch pie plate. Use the bottom of a measuring cup to compact it. Chill in freezer for 10-15 minutes.
  3. Prepare the filling. In a large bowl, beat the softened cream cheese with an electric mixer until completely smooth and creamy.
  4. Add the powdered sugar and vanilla extract to the cream cheese and beat again until fully combined and smooth.
  5. In a separate clean bowl, beat the cold heavy whipping cream on medium-high speed until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until no white streaks remain.
  7. Assemble the pie. Spread about half of the creamy filling into the bottom of the chilled crust.
  8. Arrange most of the sliced strawberries in an even layer over the filling.
  9. Gently spread the remaining creamy filling over the strawberries to seal them in.
  10. If using the glaze, warm the jam with water in microwave for 15-20 seconds, stir until smooth, and gently brush over any whole strawberries arranged on top for garnish.
  11. Chill and set. Cover pie loosely with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, until completely set before slicing.

Notes

Ensure cream cheese is fully softened to avoid lumps. Pat thawed frozen strawberries very dry to prevent a watery filling. Chilling for the full time is crucial for clean slices.
