A quick and flavorful weeknight dinner that transforms simple ground beef into a glossy, savory-sweet meal. Ready in about 20 minutes, it's faster than takeout and packed with comfort. Perfect served over rice with a garnish of fresh green onions.

  • 1 pound lean ground beef (90/10)
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup finely diced yellow onion
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons gochujang (Korean chili paste)
  • 1/2 teaspoon black pepper
  • Cooked white rice, for serving
  • 3 green onions, thinly sliced
  • 1 teaspoon toasted sesame seeds

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, gochujang, and black pepper until the sugar dissolves. Set the sauce aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
  3. Push the beef to the side of the skillet. Add the diced onion, garlic, and ginger to the cleared space. Sauté for 1-2 minutes until fragrant, then mix with the beef.
  4. Pour the prepared sauce over the beef mixture. Reduce heat to medium and simmer for 3-4 minutes, stirring frequently, until the sauce thickens into a glaze.
  5. Serve immediately over bowls of hot rice. Garnish generously with sliced green onions and toasted sesame seeds.

Notes

For a gluten-free version, use tamari. No gochujang? Substitute 1 teaspoon crushed red pepper flakes. The beef mixture stores well in the fridge for up to 4 days or freezes for 3 months.
