Easy Garlic Butter Steak Bites and Potatoes

A quick and comforting one-pan meal featuring tender sirloin steak bites and crispy roasted potatoes, all tossed in a rich garlic butter sauce. Perfect for turning a regular weeknight into something special with minimal effort and cleanup.

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Preheat oven to 425°F.
  2. Toss halved potatoes with 1 tbsp olive oil, salt, pepper, and smoked paprika on a large sheet pan. Spread in a single layer.
  3. Roast potatoes for 15 minutes.
  4. While potatoes roast, pat steak cubes dry with paper towels. Toss with remaining 1 tbsp olive oil and an extra pinch of salt and pepper.
  5. Remove hot sheet pan from oven. Push potatoes to one side and add steak cubes to the empty side.
  6. Return pan to oven and cook for 5-7 minutes for medium-rare steak.
  7. While cooking, melt butter in a small saucepan over low heat. Add minced garlic and herbs, cooking for 1-2 minutes until fragrant. Do not brown.
  8. Remove sheet pan from oven. Drizzle garlic butter sauce over steak and potatoes. Toss gently, sprinkle with parsley, and serve immediately.

Notes

For a good sear, always pat steak dry before cooking. Do not overcrowd the pan. Garlic burns easily; cook sauce over low heat only until fragrant. Leftovers reheat best in a skillet.
