  • 4 large flour tortillas (10-inch)
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons chipotle ranch seasoning
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican cheese blend
  • 1 cup diced tomatoes
  • ½ cup corn kernels (fresh, frozen, or canned)
  • ½ red onion, finely diced
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream
  • Lime wedges for serving

Instructions

  1. Flatten chicken to even thickness. Rub with olive oil and chipotle ranch seasoning. Grill 5–6 minutes per side until cooked through. Rest for 5 minutes, then slice.
  2. Warm tortillas in a dry skillet until soft and pliable. Keep covered with a towel.
  3. Assemble burritos: Spread sour cream, add rice, beans, chicken, corn, cheese, tomatoes, onion, cilantro, and avocado. Squeeze lime juice over top.
  4. Fold in sides, roll tightly, and grill burrito seam-side down in a dry skillet for 1–2 minutes per side until golden (optional).

Notes

Make your own chipotle ranch seasoning by mixing 1 tbsp ranch seasoning with 1 tsp chipotle powder and 1 tsp smoked paprika. For dairy-free, use mashed avocado or plant-based yogurt in place of sour cream.
