- 4 large flour tortillas (10-inch)
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 tablespoons chipotle ranch seasoning
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded Mexican cheese blend
- 1 cup diced tomatoes
- ½ cup corn kernels (fresh, frozen, or canned)
- ½ red onion, finely diced
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro
- ½ cup sour cream
- Lime wedges for serving
Instructions
- Flatten chicken to even thickness. Rub with olive oil and chipotle ranch seasoning. Grill 5–6 minutes per side until cooked through. Rest for 5 minutes, then slice.
- Warm tortillas in a dry skillet until soft and pliable. Keep covered with a towel.
- Assemble burritos: Spread sour cream, add rice, beans, chicken, corn, cheese, tomatoes, onion, cilantro, and avocado. Squeeze lime juice over top.
- Fold in sides, roll tightly, and grill burrito seam-side down in a dry skillet for 1–2 minutes per side until golden (optional).
Notes
Make your own chipotle ranch seasoning by mixing 1 tbsp ranch seasoning with 1 tsp chipotle powder and 1 tsp smoked paprika. For dairy-free, use mashed avocado or plant-based yogurt in place of sour cream.
