  • 1 baguette, sliced into 1/2-inch rounds
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 pint cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • Salt and black pepper to taste
  • For the Buffalo Chicken Dip:
  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup Buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup blue cheese crumbles (optional)
  • Sliced green onions for garnish

Instructions

  1. For the Cheesy Bruschetta: Preheat oven to 375°F. Arrange baguette slices on a baking sheet. Brush lightly with olive oil and toast for 8-10 minutes until crisp and lightly golden. Let cool slightly.
  2. In a bowl, mix softened cream cheese, mozzarella, and Parmesan until well blended.
  3. Spread cheese mixture onto toasted baguette slices. Place on baking sheet and broil for 3-4 minutes until cheese is bubbly and spotted with brown.
  4. While broiling, toss diced tomatoes with minced garlic, basil, a drizzle of olive oil, salt, and pepper. Spoon tomato mixture over hot cheesy toasts. Drizzle with balsamic glaze before serving.
  5. For the Buffalo Chicken Dip: In a slow cooker, combine shredded chicken, softened cream cheese, Buffalo sauce, ranch dressing, and most of the cheddar cheese. Stir well.
  6. Cover and cook on LOW for 1.5 to 2 hours, stirring once halfway, until melted and bubbly.
  7. Sprinkle with remaining cheddar and blue cheese crumbles if using. Garnish with sliced green onions. Serve warm with chips, celery, or bread.

Notes

Let cream cheese soften to room temperature to avoid lumps. Assemble bruschetta just before serving to keep the base crisp. The dip can be made ahead and reheated gently. For a lighter version, use Neufchatel cheese and Greek yogurt ranch.
