A vibrant, hydrating mocktail that swaps refined sugars for natural fruit sweetness. This antioxidant-rich pink lemonade is perfect for Valentine's gatherings or any festive occasion. It's simple to make, stunning to serve, and feels like a celebratory treat.

Ingredients

  • 4-5 medium lemons (for 3/4 cup fresh juice)
  • 1 heaping cup frozen mixed berries (strawberries, raspberries, blackberries)
  • 1/4 cup pure maple syrup or honey (adjust to taste)
  • 2 cups sparkling water (plain or lemon-flavored)
  • Ice for serving
  • Fresh mint sprigs and extra berries for garnish

Instructions

  1. In a large pitcher, add the frozen berries and maple syrup. Use a muddler or the back of a wooden spoon to gently crush the berries, releasing their juices to form a chunky syrup.
  2. Pour the freshly squeezed lemon juice into the pitcher with the muddled berries. Stir well and let the mixture sit for 5 minutes to allow the flavors to meld.
  3. For a smoother drink, optionally strain the berry mixture through a fine-mesh sieve into a clean pitcher, pressing on the solids to extract all the juice.
  4. Fill the pitcher with ice. Slowly pour in the sparkling water, stirring gently to combine while preserving the bubbles.
  5. Pour into glasses filled with ice. Garnish each glass with fresh berries and a sprig of mint. Serve immediately.

Notes

For a vegan version, use maple syrup or agave. Add a splash of pomegranate juice for extra antioxidants. Make the berry-lemon base up to 24 hours ahead; add sparkling water just before serving. Do not use bottled lemon juice for best flavor.
