  • For the Crispy Wontons:
  • 1 package (about 48) wonton wrappers
  • 1/2 lb ground pork or chicken, cooked and seasoned
  • 1 tsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • Avocado or canola oil, for frying
  • Water, for sealing wrappers
  • For Serving:
  • Tortilla chips, sturdy crackers, sliced baguette
  • Carrot sticks, celery, bell pepper strips
  • Sweet chili sauce, spicy mustard, or ranch for dipping

Instructions

  1. Make the Salsa de Queso: In a medium saucepan over medium-low heat, combine the cream cheese, diced tomatoes with their juices, cumin, and garlic powder. Stir frequently until the cream cheese is completely melted and smooth.
  2. Gradually add the freshly grated cheddar cheese to the saucepan, stirring constantly until fully melted and creamy. Do not boil. Season with a pinch of cayenne if desired. Keep warm on low.
  3. Prepare the Wonton Filling: In a bowl, mix the cooked ground meat with minced ginger, garlic, green onions, and soy sauce until well combined.
  4. Assemble the Wontons: Place 1 teaspoon of filling in the center of a wonton wrapper. Moisten the edges with water using your finger. Fold the wrapper into a triangle, pressing out air and sealing tightly. Repeat with remaining wrappers.
  5. Cook the Wontons: To fry, heat 1-2 inches of oil in a heavy pot to 350°F. Fry wontons in batches for 1-2 minutes per side until golden brown. Drain on paper towels. To bake, brush with oil and bake at 400°F for 12-15 minutes until crisp.
  6. Serve: Transfer the warm Salsa de Queso to a pre-warmed bowl. Arrange crispy wontons and an assortment of dippers on a large platter. Serve with various dipping sauces.

Notes

For a smoother dip, grate your own cheese; pre-shredded has anti-caking agents. Do not overfill wontons to prevent leaking. Uncooked wontons can be frozen on a tray then stored in a bag for up to 3 months; cook from frozen, adding a minute. Reheat leftover dip gently with a splash of milk.
