- 1 packet (1.25 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups salsa (mild, medium, or hot)
- 2 cups shredded Mexican cheese blend, divided
- 8 oz tortilla chips, slightly crushed

Instructions
- In a large skillet, brown the ground beef and diced onion over medium heat until no longer pink. Add garlic and cook 30 seconds more. Drain excess fat.
- Spray crockpot with non-stick spray. Add meat mixture and sprinkle taco seasoning. Stir to combine.
- Add black beans, corn, diced tomatoes, and salsa. Stir until evenly mixed.
- Sprinkle 1 cup of shredded cheese over the mixture (do not stir).
