This recipe transforms leftover corned beef and potatoes into a golden, crispy skillet meal. The key is letting the hash cook undisturbed to develop a savory crust. It's a fast, filling, and deeply satisfying comfort food.

  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups cooked corned beef, chopped or shredded (about 12 oz)
  • 3 cups cooked potatoes, diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil or butter in a large, heavy skillet over medium heat. Add diced onion and cook for 5-6 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
  2. Increase heat to medium-high. Add chopped corned beef and cooked potatoes to the skillet. Sprinkle with smoked paprika, thyme, salt, and pepper.
  3. Press the mixture down into an even layer with a spatula. Let it cook undisturbed for 4-5 minutes to form a golden crust on the bottom.
  4. Stir the hash well, flip sections over, and press down again. Repeat this process of cooking undisturbed and then stirring 2-3 more times, for a total of 12-15 minutes, until crispy throughout.
  5. Taste and adjust seasoning. Garnish with fresh parsley if desired and serve hot.

Notes

For best crisp, do not stir too often. Ensure potatoes and corned beef are well-drained to avoid steaming. Reheats beautifully in a skillet to restore crispiness.
