Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 lb total), pounded to ½-inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Avocado oil or neutral oil, for frying
  • 4 large flour tortillas (10-inch burrito size)
  • ½ cup ranch dressing
  • 2 cups shredded iceberg lettuce
  • 1 large tomato, diced
  • Optional: shredded cheddar cheese, sliced red onion, bacon bits

Instructions

  1. Prepare the Chicken: Place chicken breasts between plastic wrap and pound to ½-inch thickness. Slice into 1-inch wide strips.
  2. Create Breading Station: Set up three shallow dishes with flour mixture (flour, garlic powder, paprika, salt, pepper), beaten eggs, and panko breadcrumbs.
  3. Bread the Chicken: Dredge chicken strips in flour, then egg, then panko, pressing firmly to coat. Place on plate.
  4. Cook Chicken: Heat ½ inch oil in skillet to 350°F. Fry chicken 3-4 minutes per side until golden brown and internal temperature reaches 165°F. Or air fry at 400°F for 12-15 minutes.
  5. Warm Tortillas and Assemble: Warm tortillas in dry skillet or microwave. Spread ranch dressing down center, add lettuce, tomato, and crispy chicken strips.
  6. Fold and Roll: Fold bottom third up over fillings, then fold sides inward, and roll tightly from bottom up. Slice diagonally and serve immediately.

Notes

For gluten-free version: Use gluten-free flour and certified gluten-free panko. For dairy-free: Use dairy-free ranch dressing. Store components separately for up to 3 days. Cooked chicken strips freeze well for up to 3 months. Reheat in air fryer or oven to maintain crispiness.
