A handheld masterpiece featuring golden-brown, crispy chicken strips wrapped with crisp romaine lettuce and a creamy, garlicky homemade Caesar dressing. This recipe is perfect for meal prep, as the components store separately for easy assembly throughout the week.

  • 1 lb boneless, skinless chicken breasts or thighs, cut into strips
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Oil for frying
  • 1/2 cup mayonnaise
  • 2 tbsp freshly grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1-2 cloves garlic, minced
  • 2-3 anchovy fillets, minced, or 1 tsp anchovy paste
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 head romaine lettuce, chopped
  • Extra Parmesan for serving

Instructions

  1. Make the dressing by whisking mayonnaise, 2 tbsp Parmesan, lemon juice, Dijon, minced garlic, and anchovies in a bowl. Season with salt and pepper. Set aside.
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko mixed with 1/2 cup Parmesan, garlic powder, paprika, salt, and pepper.
  3. Pat chicken strips dry with paper towels. Dredge each piece in flour, dip in egg, then press into the panko mixture to coat evenly.
  4. Heat about 1/2 inch of oil in a large skillet over medium-high heat. Fry chicken in batches for 3-4 minutes per side until golden and cooked through. Drain on paper towels.
  5. Warm tortillas in a dry skillet or microwave for 15-20 seconds to make pliable.
  6. Spread Caesar dressing down the center of each tortilla. Top with chopped romaine, crispy chicken strips, and a sprinkle of extra Parmesan.
  7. Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a wrap. Slice in half and serve immediately.

Notes

For best results, store cooked chicken, dressing, and lettuce separately for meal prep. Reheat chicken in an air fryer or toaster oven to maintain crispiness. You can bake the chicken at 425°F for 15-18 minutes instead of frying.
