This one-pan Creamy Tuscan Chicken is a weeknight lifesaver. Tender chicken is seared and simmered in a rich, garlicky sauce with sun-dried tomatoes, spinach, and Parmesan. It is elegant comfort food ready in 30 minutes.

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 4-5 large garlic cloves, minced
  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 1/3 cup dry white wine (like Pinot Grigio) or chicken broth
  • 1 1/2 cups heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 3 cups fresh baby spinach
  • Fresh basil or parsley, for garnish

Instructions

  1. Pat chicken dry and season on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until golden and cooked through. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add onion and cook for 3-4 minutes until softened. Add garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
  4. Pour in white wine (or broth) and scrape up browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  5. Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese. Simmer for 3-4 minutes, stirring frequently, until cheese melts and sauce thickens slightly.
  6. Stir in spinach until just wilted, about 1 minute. Return chicken to the skillet, spooning sauce over the top. Heat through for 2-3 minutes. Garnish with fresh herbs and serve.

Notes

For a golden sear, ensure chicken is patted dry. Freshly grated Parmesan melts better than pre-shredded. To prevent a grainy sauce, do not boil the cream mixture; keep at a gentle simmer. For a lighter version, use half-and-half or full-fat coconut milk.
