  • 1 (16.5 oz) roll refrigerated sugar cookie dough
  • 2 tablespoons all-purpose flour, for dusting
  • 1 (8 oz) block cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup frozen whipped topping, thawed
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 kiwi, peeled and sliced
  • 1/4 cup apricot preserves or apple jelly
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, press or roll the cookie dough into a 12-inch circle or 10x15-inch rectangle on the prepared baking sheet, about 1/4-inch thick.
  3. Bake for 10-12 minutes, until edges are light golden. The center will be soft. Cool completely on the baking sheet.
  4. While crust cools, make the frosting. Beat softened cream cheese, sugar, and vanilla with a mixer until smooth and creamy, about 2 minutes.
  5. Gently fold the thawed whipped topping into the cream cheese mixture with a spatula until no streaks remain.
  6. Once the cookie crust is completely cool, spread the frosting evenly over the top, leaving a small border.
  7. Arrange the washed and dried fruit over the frosting in your desired pattern.
  8. For the glaze, combine apricot preserves and water in a small microwave-safe bowl. Heat for 15-20 seconds until runny. Use a pastry brush to gently dab the glaze over the fruit.
  9. Slice into wedges and serve immediately or refrigerate until ready to serve.

Notes

Ensure the cookie crust is completely cool before adding the frosting to prevent melting. Thoroughly dry all fruit after washing to avoid a soggy crust. The glaze is optional but adds shine and helps keep fruit fresh.
