  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Generously butter a 9x13 inch baking dish. Add the cubed bread in an even layer.
  2. In a large bowl, whisk the eggs until well blended and slightly frothy.
  3. Whisk in the milk, heavy cream, granulated sugar, vanilla, 1 tsp cinnamon, nutmeg, and salt until smooth and the sugar is dissolved.
  4. Pour the custard mixture evenly over the bread cubes. Gently press down on any pieces to ensure they are submerged.
  5. Cover the dish tightly with plastic wrap and refrigerate for at least 8 hours, or up to 12.
  6. When ready to bake, preheat oven to 350°F. In a small bowl, mix the melted butter, brown sugar, and 1 tsp cinnamon for the topping.
  7. Drizzle and spread the butter-sugar topping evenly over the soaked bread.
  8. Bake for 45-55 minutes, until the top is deeply golden brown and the center is set (a knife inserted should come out clean).

Notes

Stale or day-old bread works best. Do not skip the overnight soak, as it is essential for the creamy texture. For a blueberry version, toss 1 1/2 cups of fresh or frozen berries with the bread cubes before adding the custard.
