A simple, vibrant dessert that captures the essence of fresh summer strawberries. This pie features juicy berries in a sweet, creamy filling set in a buttery graham cracker crust, all without turning on the oven.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 pound fresh strawberries, hulled and sliced
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • 1/4 cup granulated sugar

Instructions

  1. Make the crust by combining graham cracker crumbs and 1/3 cup sugar. Stir in melted butter until mixture resembles wet sand.
  2. Press mixture firmly into bottom and up sides of a 9-inch pie plate. Freeze for 15 minutes.
  3. Beat softened cream cheese until smooth. Add powdered sugar and vanilla, beat until creamy.
  4. In a separate bowl, beat cold heavy cream and 1/4 cup sugar until stiff peaks form.
  5. Gently fold one third of the whipped cream into the cream cheese mixture to lighten it. Fold in remaining whipped cream until no streaks remain.
  6. Arrange a single layer of sliced strawberries in the chilled crust. Spoon the creamy filling over the berries, spreading to the edges.
  7. Cover pie loosely and refrigerate for at least 4 hours, or overnight, until set.
  8. Garnish with reserved whole or sliced strawberries before serving.

Notes

Ensure cream cheese is fully softened to avoid lumps. Pat sliced strawberries dry to prevent a soggy crust. The pie must chill for the full 4+ hours to set properly for clean slices.
