This dip transforms the classic flavors of jalapeño poppers into an easy, scoopable appetizer. It's a creamy, cheesy, and slightly spicy crowd-pleaser perfect for game day or any gathering.

  • 16 ounces cream cheese, at room temperature
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 6-8 medium jalapeños, finely diced (seeds and ribs removed for milder heat)
  • 8 slices bacon, cooked until crisp and crumbled
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 3 green onions, thinly sliced (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine the room-temperature cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or sturdy spatula until completely smooth and creamy.
  3. To the creamy base, add 1 1/2 cups of the shredded cheddar (reserving 1/2 cup for the top), all of the Monterey Jack cheese, diced jalapeños, about 3/4 of the crumbled bacon (reserve the rest for garnish), Parmesan cheese, garlic powder, smoked paprika, and black pepper. Fold everything together until evenly combined.
  4. Transfer the mixture to a greased 9-inch baking dish or 10-inch cast-iron skillet. Smooth the top with a spatula.
  5. Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top.
  6. Bake for 25-30 minutes, until the dip is hot and bubbly throughout and the top is golden brown.
  7. Carefully remove from the oven and let rest for 5 minutes to set slightly.
  8. Garnish with the remaining crumbled bacon and sliced green onions. Serve immediately while warm.

Notes

For a smooth dip, it is crucial to use room-temperature cream cheese. Control the spice level by removing the seeds and ribs from the jalapeños. The dip can be assembled a day ahead, covered, and refrigerated before baking.
