  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 3 tbsp olive oil, divided
  • 4 tbsp unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat steak cubes dry with paper towels and season generously with salt and pepper.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add steak in a single layer and sear for 2-3 minutes per side until browned. Transfer to a plate.
  3. Add remaining 1 tbsp olive oil to the skillet. Add potatoes, cut-side down, and cook for 10-12 minutes, stirring occasionally, until golden and tender.
  4. Push potatoes to the side. Reduce heat to medium. Add 2 tbsp butter and minced garlic. Cook for 30-60 seconds until fragrant.
  5. Pour in beef broth to deglaze the pan, scraping up browned bits. Whisk in Dijon mustard, Worcestershire sauce, and thyme.
  6. Simmer sauce for 2-3 minutes to reduce slightly. Stir in heavy cream.
  7. Return seared steak and any juices to the skillet. Add remaining 2 tbsp butter. Simmer gently for 3-4 minutes until steak is cooked to desired doneness and sauce thickens.
  8. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and serve immediately.

Notes

For a good sear, do not crowd the pan when cooking the steak. Dry the steak thoroughly before seasoning. Do not burn the garlic; cook just until fragrant. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
