  • 2 cups full-fat Greek yogurt
  • 1/2 cup finely chopped fresh herbs (such as dill, chives, and parsley)
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp extra virgin olive oil
  • 1 tsp kosher salt, or to taste
  • 1/2 tsp freshly cracked black pepper
  • Optional: pinch of smoked paprika

Instructions

  1. Place the Greek yogurt in a medium mixing bowl. Whisk briefly to smooth it out if it is very thick.
  2. Add the chopped herbs, minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper to the bowl.
  3. Using a spatula, gently fold all ingredients together until just combined. Be careful not to over-mix.
  4. Taste the dip and adjust seasoning with more salt or lemon juice if needed. Remember flavors will mellow slightly when chilled.
  5. Transfer the dip to a serving bowl. Cover tightly with plastic wrap and refrigerate for at least 1 hour, or ideally 2-4 hours, to allow the flavors to meld.
  6. Before serving, give the dip a quick stir. Optionally, drizzle with a little more olive oil and sprinkle with extra herbs or smoked paprika for garnish.

Notes

For the best flavor, do not skip the chilling time. If adding ingredients like cucumber, be sure to squeeze out all excess moisture first. The dip can be stored in an airtight container in the refrigerator for up to 4 days.
