This set-and-forget casserole is the ultimate weeknight comfort food. Savory sausage, tender hash browns, and a rich, cheesy sauce come together effortlessly in your slow cooker. It's a hearty, satisfying meal that simmers all day, filling your home with a welcoming aroma.

  • 1 pound bulk breakfast sausage, mild or hot
  • 1 (30-32 ounce) bag frozen shredded hash browns
  • 1 medium yellow onion, diced
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup whole milk or chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Cooking spray or butter for greasing

Instructions

  1. In a large skillet over medium heat, cook the sausage and diced onion together, breaking the sausage into crumbles. Cook until sausage is browned and onion is soft. Drain excess grease.
  2. Lightly grease the inside of a 6-quart or larger slow cooker with cooking spray or butter.
  3. In a large mixing bowl, whisk together the condensed soup, sour cream, milk or broth, garlic powder, smoked paprika, and black pepper until smooth.
  4. To the creamy mixture, add the frozen hash browns, the cooked sausage and onion, and 1 1/2 cups of the shredded cheddar cheese. Gently fold everything together until well combined.
  5. Transfer the mixture to the prepared slow cooker and spread into an even layer. Sprinkle the remaining 1/2 cup of cheese evenly over the top.
  6. Cover and cook on HIGH for 3-4 hours or on LOW for 6-7 hours. The casserole is done when the edges are bubbly and the potatoes are tender.

Notes

Use frozen hash browns directly from the freezer; thawing will make the casserole soggy. For a lighter version, use turkey sausage and low-fat dairy. This casserole can be assembled the night before and refrigerated, then cooked the next day.
