  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • Flour for dusting
  • For the Cream Cheese Frosting:
  • 8 oz block cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 2 cups powdered sugar
  • For the Fruit Topping:
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi, peeled and sliced
  • 1/2 cup mandarin orange segments, drained
  • 1/2 cup red seedless grapes, halved
  • Optional Glaze: 2 tablespoons apricot or apple jelly + 1 teaspoon water, warmed

Instructions

  1. Preheat oven to 350°F (175°C). Lightly flour your hands and press the cookie dough evenly into a 12-inch pizza pan or parchment-lined baking sheet to form a 1/4-inch thick circle. Prick all over with a fork.
  2. Bake crust for 10-12 minutes until edges are light golden brown. Let cool completely on the pan.
  3. Make the frosting: In a large bowl, beat softened cream cheese and butter until smooth and fluffy. Beat in vanilla extract.
  4. Gradually add powdered sugar, beating on low until incorporated, then increase speed until frosting is light and spreadable.
  5. Spread the frosting evenly over the completely cooled cookie crust, leaving a small border.
  6. Arrange the prepared fresh fruit artfully over the frosting. If using, gently brush the optional warmed jelly glaze over the fruit.
  7. Refrigerate the assembled pizza for at least 1 hour, or preferably overnight, before slicing and serving.

Notes

Ensure the cookie crust is completely cool before adding frosting to prevent melting. Pat all fruit dry thoroughly to avoid a soggy crust. The pizza can be assembled a day ahead for best flavor. Fruit combinations can be customized based on season and preference.
