  • For the Fruit Topping:
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • Optional: 2-3 tablespoons apricot jam or apple jelly, warmed, for glaze

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla until combined.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to butter mixture, mixing on low until a soft dough forms.
  3. Press dough evenly into a 12-inch pizza pan or parchment-lined baking sheet to form a 1/4-inch thick circle. Prick all over with a fork.
  4. Bake for 15-18 minutes until edges are light golden. Let cool completely on pan.
  5. For frosting, beat softened cream cheese and butter until smooth. Gradually add sifted powdered sugar, then vanilla and salt. Beat until light and fluffy.
  6. Spread frosting evenly over cooled crust, leaving a small border.
  7. Arrange washed and dried berries artfully over the frosting.
  8. Optional: Gently brush warmed jam over fruit for a glossy finish.
  9. Chill in refrigerator for at least 30 minutes before slicing and serving.

Notes

Ensure butter and cream cheese are fully softened. Let crust cool completely before frosting. Dry berries thoroughly to prevent a soggy crust. Store leftovers covered in refrigerator for 2-3 days. For gluten-free, use a 1:1 gluten-free flour blend.
