These deviled eggs are a flavor-packed twist on the classic, featuring a velvety smooth filling made from sieved yolks, smoky bacon, and tangy ranch seasoning. Perfect for parties and gatherings, they are a guaranteed crowd-pleaser that combines comfort food ease with impressive results.

  • 12 large eggs
  • 6 slices thick-cut bacon, cooked until crisp and finely crumbled
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 1/2 tablespoons ranch seasoning mix
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice or white vinegar
  • Salt and freshly cracked black pepper, to taste
  • For garnish: Additional crumbled bacon, chopped fresh chives or parsley, and a sprinkle of paprika

Instructions

  1. Place eggs in a single layer in a saucepan, cover with cold water by 1 inch. Bring to a full boil, then cover and remove from heat. Let sit for 12 minutes. Transfer immediately to an ice bath to cool completely, then peel.
  2. Slice each egg in half lengthwise. Gently remove yolks and place them in a fine-mesh sieve set over a medium bowl. Use a spatula to press the yolks through the sieve for an ultra-smooth texture.
  3. To the sieved yolks, add mayonnaise, sour cream, ranch seasoning, Dijon mustard, and lemon juice. Stir until completely smooth and creamy.
  4. Fold in about two-thirds of the crumbled bacon. Taste and season with salt and pepper as needed.
  5. Spoon the filling into a piping bag fitted with a star tip or a zip-top bag with a corner snipped off. Pipe filling evenly into the egg white halves.
  6. Garnish with remaining bacon, fresh chives or parsley, and a light dusting of paprika. Serve immediately or chill briefly before serving.

Notes

For the smoothest filling, do not skip sieving the yolks. You can boil eggs and cook bacon a day ahead. Assemble within 3-4 hours of serving for best texture. For homemade ranch seasoning, mix 2 tsp dried parsley, 1 1/2 tsp garlic powder, 1 1/2 tsp onion powder, 1 tsp dried dill, 1/2 tsp salt, and 1/4 tsp black pepper.
