  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 pound fresh strawberries, hulled and sliced
  • 1 cup water
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream, cold

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs and 1/3 cup sugar. Stir in melted butter until crumbs are evenly moistened. Press mixture firmly into bottom and up sides of a 9-inch pie plate. Chill for 30 minutes.
  2. Prepare strawberry filling: In a saucepan, whisk together 3/4 cup sugar and cornstarch. Gradually whisk in water until smooth. Cook over medium heat, stirring constantly, until mixture thickens, becomes clear, and bubbles, about 5-7 minutes. Remove from heat and stir in lemon juice and vanilla. Let cool 15 minutes.
  3. Combine strawberries and glaze: Place sliced strawberries in a large bowl. Pour the slightly cooled glaze over berries and fold gently to coat. Set aside.
  4. Make cream cheese layer: In a large bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and beat until fluffy. In a separate chilled bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until no streaks remain.
  5. Assemble the pie: Spread the cream cheese mixture evenly into the chilled crust. Spoon the glazed strawberry filling over the top. Arrange any reserved whole strawberries for garnish if desired.
  6. Chill: Loosely cover pie with plastic wrap and refrigerate for at least 4 hours, or overnight, until fully set.

Notes

For clean slices, chill the pie overnight. Ensure the strawberry glaze is only warm, not hot, when added to the cream layer to prevent melting. The crust must be chilled before filling to hold its shape.
