  • 1 (17.5 oz) package refrigerated sugar cookie dough
  • 1 (8 oz) package cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1 kiwi, peeled and sliced
  • 1/4 cup apricot preserves or apple jelly

Instructions

  1. Preheat oven to 350°F (175°C). Press cookie dough evenly into a 12-inch pizza pan or baking sheet lined with parchment to form a 1/4-inch thick crust.
  2. Bake crust for 10-12 minutes until edges are light golden. Center will look soft. Cool completely on pan.
  3. While crust cools, beat softened cream cheese, sugar, and vanilla in a bowl until smooth and creamy.
  4. Spread cream cheese mixture evenly over cooled crust, leaving a small border.
  5. Arrange sliced strawberries, blueberries, raspberries, and kiwi on top of cream cheese layer.
  6. Heat apricot preserves in microwave for 15-20 seconds until melted. Brush gently over fruit to create a glossy glaze.
  7. Slice into wedges and serve immediately, or chill until ready to serve.

Notes

Ensure crust is completely cool before adding cream cheese to prevent melting. Pat fruit dry after washing. Customize with seasonal fruits. Store leftovers covered in refrigerator for up to 2 days.
