  • 1/2 cup strawberry jam or apricot preserves, warmed
  • 4-5 cups assorted fresh berries (strawberries, blueberries, raspberries, blackberries)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Make the cookie dough: Cream butter and sugar until fluffy. Beat in egg and vanilla. Whisk flour, baking powder, and salt in a separate bowl. Gradually add dry ingredients to wet, mixing until a soft dough forms. Wrap and chill for 30 minutes.
  2. Par-bake the crust: Preheat oven to 350°F (175°C). Press chilled dough evenly into a 12-inch pizza pan or parchment-lined baking sheet, forming a raised edge. Prick dough with a fork. Bake for 12-15 minutes until edges are light golden. Cool completely.
  3. Make the cream cheese layer: Beat softened cream cheese until smooth. Add powdered sugar and vanilla; beat until creamy and lump-free.
  4. Assemble the pizza: Spread cream cheese mixture evenly over the cooled crust. Arrange washed and dried berries in a decorative pattern. Gently brush warmed jam over the berries to glaze. Garnish with mint if desired. Serve chilled.
