  • 2 lbs boneless, skinless chicken thighs
  • 1 large bunch fresh cilantro, stems and leaves (about 2 cups packed)
  • 4 cloves garlic, peeled
  • Zest and juice of 2 large limes (about 1/4 cup juice)
  • 1/3 cup extra virgin olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Make the marinade. In a blender or food processor, combine cilantro, garlic, lime zest, lime juice, olive oil, cumin, smoked paprika, salt, black pepper, and red pepper flakes. Blend until a mostly smooth, vibrant green sauce forms.
  2. Marinate the chicken. Place chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal or cover and refrigerate for at least 1 hour, ideally up to 4 hours.
  3. Preheat the grill. Preheat a grill to medium-high heat (400-425°F). Clean and lightly oil the grates.
  4. Grill the chicken. Remove chicken from marinade, letting excess drip off. Discard used marinade. Place chicken on the hot grill. Cook for 5-6 minutes per side without moving, until well-marked and the internal temperature reaches 165°F.
  5. Rest and serve. Transfer chicken to a clean plate or cutting board. Let rest for 5 minutes before slicing or serving.

Notes

For best texture, do not marinate in the lime juice for more than 8 hours. For overnight marinating, add the lime juice only for the last 30-60 minutes. Letting the chicken rest after grilling is crucial for juiciness. Can be cooked indoors on a grill pan or cast-iron skillet over medium-high heat.
