  • 1/4 cup mini chocolate chips
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt

Instructions

  1. In a medium bowl, combine the rolled oats, ground flaxseed, and salt.
  2. In a small bowl, stir together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet mixture over the dry ingredients and mix with a sturdy spoon or spatula until a thick, cohesive dough forms.
  4. Gently fold in the mini chocolate chips until evenly distributed.
  5. Cover the bowl and let the dough rest at room temperature for 15-20 minutes. This allows the oats to absorb moisture and makes rolling easier.
  6. Using a tablespoon or small cookie scoop, portion the dough. Roll each portion between your palms to form a smooth, compact ball.
  7. Place the rolled bites on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up before serving.

Notes

For best results, do not skip the resting step. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months. For a vegan version, use maple syrup and dairy-free chocolate chips.
