These truffles capture the classic flavor of chocolate-dipped strawberries in a neat, bite-sized package. A creamy, strawberry-infused center is cloaked in a shell of smooth chocolate for a decadent treat that's perfect for gifting or special occasions.

Ingredients

  • 1 oz bag freeze-dried strawberries
  • 4 oz full-fat cream cheese, room temperature
  • 1 1/2 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 10 oz semi-sweet or dark chocolate baking bars, chopped
  • Optional: extra crushed freeze-dried strawberry, sprinkles, or melted white chocolate for decoration

Instructions

  1. Process the freeze-dried strawberries in a food processor, blender, or in a sealed bag with a rolling pin until a fine powder forms.
  2. In a medium bowl, beat the room-temperature cream cheese until completely smooth and creamy.
  3. Gradually beat in the sifted powdered sugar until fully combined.
  4. Mix in the vanilla extract, salt, and all of the strawberry powder until the mixture is uniform and pale pink.
  5. Cover the bowl and refrigerate the dough for at least 2 hours, until firm.
  6. Line a baking sheet with parchment paper. Use a small cookie scoop or teaspoon to portion the dough, then roll into smooth balls. Place on the prepared sheet.
  7. Freeze the rolled truffle centers for 15-20 minutes to firm up completely.
  8. While chilling, melt the chopped chocolate in a double boiler or in the microwave in 30-second bursts, stirring until smooth. Transfer to a deep, narrow cup.
  9. Working with a few cold truffle centers at a time, use a fork to dip each ball into the melted chocolate. Tap off excess and return to the parchment paper.
  10. If desired, immediately decorate with sprinkles or strawberry powder before the chocolate sets.
  11. Let truffles set completely at room temperature or refrigerate for 10 minutes to speed up the process. Store in an airtight container.

Notes

Chill times are crucial for success. Ensure truffle centers are very cold before dipping. Using baking bar chocolate, not chips, creates a smoother coating. For dairy-free, use vegan cream cheese and dairy-free chocolate.
