This no-bake bark is a surprisingly light and indulgent treat. It combines antioxidant-rich dark chocolate with the natural sweetness of fresh strawberries for a guilt-free pleasure. Perfect for a quick dessert or a thoughtful homemade gift.

  • 12 ounces high-quality dark chocolate (60-70% cacao), chopped, or dark chocolate chips
  • 1 pint fresh strawberries (about 2 cups), hulled and very finely diced
  • 1/2 teaspoon pure vanilla extract
  • A pinch of flaky sea salt (optional)

Instructions

  1. Line a rimmed baking sheet (about 13x18 inches) with parchment paper or a silicone baking mat.
  2. Hull and finely dice the strawberries. Pat them gently with a paper towel to remove excess surface moisture.
  3. Place the chopped chocolate in a microwave-safe bowl. Microwave in 30-second bursts, stirring vigorously after each interval, until almost completely melted. Stir until smooth.
  4. Stir the vanilla extract into the melted chocolate until fully incorporated.
  5. Pour the chocolate onto the prepared baking sheet. Use an offset spatula or the back of a spoon to spread it into a thin, even layer about 1/4-inch thick.
  6. Immediately sprinkle the diced strawberries evenly over the warm chocolate, pressing them in lightly. Optionally, sprinkle with flaky sea salt.
  7. Allow the bark to set completely at room temperature for 1-2 hours, or in the refrigerator for 30-45 minutes.
  8. Once firm, lift the bark from the pan and break it into rustic pieces with your hands or a knife.

Notes

Ensure strawberries are dry to prevent chocolate from seizing. For best results, use high-quality chocolate. Store in an airtight container at room temperature for up to 3 days, in the fridge for up to a week, or freeze for up to 2 months.
