  • 12 ounces high-quality dark chocolate chips or chopped bars (60-70% cacao)
  • 2 cups mini pretzels, lightly crushed
  • 1 cup freeze-dried strawberries, lightly crushed
  • 1/2 teaspoon flaky sea salt
  • 1 teaspoon coconut oil or refined coconut oil (optional)

Instructions

  1. Line a 9x13 inch rimmed baking sheet with parchment paper, leaving overhang on the sides. Scatter the lightly crushed pretzels evenly over the parchment.
  2. Place chocolate chips (and optional coconut oil) in a microwave-safe bowl. Microwave in 30-second bursts, stirring vigorously between each, until completely smooth and glossy (about 90 seconds total). Alternatively, melt using a double boiler.
  3. Pour the melted chocolate over the pretzel layer. Use an offset spatula or spoon to spread it into an even layer, covering most of the pretzels.
  4. Immediately sprinkle the crushed freeze-dried strawberries evenly over the wet chocolate, followed by the flaky sea salt.
  5. Transfer the pan to the refrigerator. Chill undisturbed for at least 1 hour, or until the chocolate is completely firm.
  6. Use the parchment paper handles to lift the set bark from the pan. Place on a cutting board and break into rustic pieces with your hands. Store in an airtight container.

Notes

Use only freeze-dried strawberries, as fresh or frozen fruit will make the chocolate seize. For gluten-free bark, use gluten-free pretzels. For dairy-free, use dairy-free chocolate chips. Store in the fridge in warm climates to prevent softening.
