  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 2 tsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 4 large burrito-size flour tortillas
  • 1 cup cooked white or brown rice, warmed
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 large avocado, sliced
  • 1 cup shredded Monterey Jack or cheddar cheese
  • ½ cup sour cream or plain Greek yogurt
  • ½ cup fresh cilantro, chopped

Instructions

  1. In a bowl, whisk olive oil, lime juice, honey, chipotle powder, smoked paprika, cumin, garlic, salt, and pepper to make the marinade.
  2. Place chicken in a dish or bag, add marinade, and coat thoroughly. Refrigerate for at least 30 minutes.
  3. Preheat grill or skillet to medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F.
  4. Transfer chicken to a cutting board, let rest 5 minutes, then slice thinly against the grain.
  5. Warm tortillas in a dry skillet or microwave wrapped in a damp paper towel for 20-30 seconds.
  6. Lay a tortilla flat. In the lower third, layer rice, black beans, corn, sliced chicken, avocado, cheese, sour cream, and cilantro.
  7. Fold in the sides, then roll tightly from the bottom edge, tucking fillings as you go. Place seam-side down. Repeat for remaining wraps.

Notes

Marinating the chicken is key for flavor. Do not overfill tortillas to prevent tearing. For meal prep, store components separately and assemble fresh. Warm tortillas before rolling to make them pliable.
