  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 6 slices thick-cut bacon, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 large tomato, diced

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.
  2. Add olive oil to the skillet if needed. Season chicken pieces with 1 tsp garlic powder, 1 tsp onion powder, smoked paprika, salt, and pepper. Cook over medium-high heat for 6-8 minutes until golden brown and cooked through. Remove chicken and let rest.
  3. While chicken cooks, make the sauce. In a medium bowl, whisk together mayonnaise, sour cream, buttermilk, and lemon juice until smooth. Stir in dill, parsley, ½ tsp garlic powder, ½ tsp onion powder, salt, and pepper. Set aside.
  4. Warm tortillas briefly in a dry skillet or microwave for 15-20 seconds to make them pliable.
  5. Lay a tortilla flat. Spread a generous layer of sauce down the center, leaving a border. Top with shredded lettuce, cooked chicken, crispy bacon, shredded cheese, and diced tomato.
  6. Fold in the sides of the tortilla over the filling, then tightly roll it up from the bottom, tucking in the filling as you go. Serve immediately or wrap for later.

Notes

For meal prep, store components separately. Use Greek yogurt instead of sour cream for a protein boost. Ensure lettuce is dry to prevent soggy tortillas. Thighs stay juicier than breasts.
