A quick and satisfying weeknight meal featuring garlic butter chicken and melty cheese in a crispy tortilla. Perfect for using leftover chicken and ready in under 30 minutes.

  • 2 cups cooked chicken, shredded or diced
  • 4 large flour tortillas (burrito-size)
  • 1 1/2 cups shredded cheese (mix of mozzarella and sharp cheddar)
  • 3 tablespoons butter
  • 4-5 cloves garlic, minced
  • 1/2 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Olive oil or cooking spray for brushing

Instructions

  1. In a medium bowl, combine shredded chicken, sour cream, onion powder, smoked paprika, and black pepper.
  2. Melt butter in a small saucepan over low heat. Add minced garlic and cook for 60-90 seconds until fragrant. Pour garlic butter over chicken mixture and stir to coat. Season with salt.
  3. Lay a tortilla flat. Sprinkle a layer of cheese down the center, leaving a 2-inch border at top and bottom.
  4. Spoon a quarter of the chicken mixture over the cheese. Top with another sprinkle of cheese.
  5. Fold the bottom edge over the filling, fold in the sides tightly, and roll forward into a secure bundle. Repeat with remaining tortillas.
  6. Heat a large skillet or griddle over medium heat. Lightly brush with oil.
  7. Place wraps seam-side down. Cook for 3-4 minutes per side, pressing gently, until golden brown and crispy and cheese is melted inside.

Notes

Do not overfill tortillas to prevent breaking. Cook seam-side down first to seal. For extra crispiness, use a panini press. Can be assembled and frozen before cooking.
